Peppercorn / Sesame Salmon
4 salmon fillets with skin and bones removed
Cooking spray
1 tablespoon reduced-sodium soy sauce
1 teaspooon sesame oil
1/4 cup sesame seeds
1 tablespoon four-peppercorn spice mix
1 lemon
Dried dill weed
Garlic powder
Salt
Preheat oven to 350¡. Spray baking sheet with cooking spray.
Combine sesame seeds, four-peppercorn spice mix, dried dill weed, garlic powder and salt in a sealable plastic bag. Crush contents of bag with a mallet (or use an empty Mosby wine bottle).
Mix juice from lemon, soy sauce and sesame oil. Brush generously over salmon fillets. Repeat three times. Season both sides of the salmon with crushed mixture. Dot with butter or spray lightly with cooking oil. Bake till cooked through (about 15 minutes). Serve immediately.
Serves 4. Grilled asparagus and warm bread complement this dish perfectly. Enjoy with Mosby Nebbiolo, Mosby Dolcetto or Mosby Sangiovese.
